My weekend culinary adventures continued with Ratatouille. I found a number of different recipes via Google, and added my own touches to this eggplant/zucchini/olive oil-based dish. I added pepperoni, though sausage would work well, too. I also chopped up a baked potato and tossed that in. To make it a tad more hearty I served the ratatouille over a bed of spiral pasta.
